You're welcome! I'm going to give that jambalaya a try at some point--thanks to the pandemic, I've fallen out of the habit of cooking serious meals, and it's time I started up again. My father used to make a very elaborate jambalaya when I was a kid (he'd lived in New Orleans for a good part of his life). Between his version and Leah Chase's, I have a standard to meet. :-)
